Piper nigrum (black pepper). The fruits of this Indian climbing plant contain bisabolene, camphene and piperine, which have a stimulating effect. Pepper is a warming, hot spice ingredient in many curry mixtures and Indian recipes.
Directions for black pepper
One cooking rule says: white pepper for light-couloured dishes, black pepper for dark-couloured dishes. White pepper should be used for sharpening and should be added just before the end of the cooking time. Whereas black pepper has a more intense aroma that needs longer to get the best taste.
